These are classic, no-frills, from-scratch cinnamon rolls. It's one of the earliest recipes we committed to our recipe book and unfortunately we neglected to credit the recipe's source when we wrote it down... Sorry! The recipe also includes directions for a thick and rich cream cheese frosting to layer on top after baking and cooling - our favorite variation is to serve half of the rolls with orange extract and food coloring added!
Ingredients and directions are divided into three sections: one each for dough, filling, and frosting. So, be careful to read all three cards to get the total amount of ingredients!
Cinnamon Roll Dough (Yields 12 rolls)
Ingredients:
1 cup, warm milk
2.5 tsp instant dry yeast
2 large eggs, room temperature
1/3 cup salted butter, room temperature
1 tsp salt
1/2 cup granulated sugar
4.5 cups all-purpose flour, divided
Directions:
1) Combine milk and yeast in a bowl or stand mixer.
2) Add eggs, butter, salt, and sugar and mix.
3) Add 4 cups flour and mix until just combined (w/ paddle, if using stand mixer)
4) Rest dough for five minutes.
5) Add remaining half-cup of flour.
6) Knead (medium speed w/ bread hook if using stand mixer) 5-7 mins, until elastic and smooth.
7) Move dough to a greased bowl, cover, rest and let rise 30 minutes.
Cinnamon Roll Filling (Yields 12 rolls)
Ingredients:
1/2 cup salted butter
1 cup brown sugar
2 tbsp cinnamon
1/2 cup heavy cream, plus some to pour over later
Directions:
1) While dough is rising mix butter, brown sugar, cinnamon and 1/2 cup heavy cream.
2) After dough is finished rising, lay out on a floured work surface.
3) Sprinkle top with flour and roll out into a roughly 24 x 15" rectangle
4) Spread filling across the dough and roll it length-wise from the edge.
5) Cut roll into 12 slices, each about 2 inches thick.
6) Arrange sliced rolls with interiors facing up on a greased baking sheet.
7) Pour heavy cream over rolls and allow 20 mins to soak and to rise again.
8) Preheat oven to 375℉ (190℃) for 20-22 minutes.
Cream Cheese Frosting (Yields 12 portions)
Ingredients:
8 oz cream cheese, room temperature
1/2 cup butter, room temperature
3 cups powdered sugar
1/2 tbsp vanilla extract
Directions:
1) Mix well cream cheese, butter, powdered sugar, vanilla extract.
2) Allow rolls time to cool after baking or frosting will melt.
3) When rolls are warm-to-touch, spread frosting across the tops. Best served immediately.
