An indulgent and vegetable-packed pasta dish. My girlfriend enjoys this one with chicken, but I think it smacks with salmon :)
Pasta Florentine (Yields 4-6 servings)
Ingredients:
16 oz penne pasta
3 garlic cloves, minced
1/3 cup white wine
15 oz canned diced tomatoes
2 cups heavy cream
2 cups shredded mozzarella cheese
1 cup grated parmesan cheese
Salt & black pepper
2 tbsp parsley, fresh chopped
1/2 tsp oregano
2 cups baby spinach

Pasta Florentine (Yields 4-6 servings)
Directions:
1) Cook penne until al dente, according to package instructions
2) Saute garlic until fragrant, then add white wine and tomatoes and simmer 1 minute
3) Add heavy cream and bring mixture back to a simmer
4) Add mozzarella and parmesan cheeses slowly, stirring constantly to combine
5) Season to taste with salt and pepper and remove from heat
6) Add parsley, oregano, and baby spinach; mix to allow spinach to wilt
7) Add pasta, toss to combine
